Description
Burdock is a multi use plant, with fleshy taproots like thin Parsnips and leaves can be used like giant Spinach. Tall flowers bloom with the look of thistle like flowers blooming second year. Cold tolerant, with roots which can be eaten raw or cooked grow deep within the soil although crisp and sweet in flavour tones. Common to be fermented as a root, known to have liver cleansing properties and have a wealth of purposes in both Chinese and Western medicine.
